Chocolate Mousse and A Duchess

The following items have nothing in common. You’ve been warned.

Item 1: a conversation via text between my mom, my sister Heather, and myself

Before I got on, I should mention that we think that Kate Middleton (rather, Duchess Catherine) is just the bees knees and can do no wrong when it comes to fashion, pregnant or not. The fact that she is pulling off pregnancy better than the average bear comes as no surprise and we love looking at pictures of her most recent adorable maternity outfits.

I’ll be honest, though – even on a good day, she’s tough to relate to as a fellow pregnant person, especially when she’s rocking a custom designer frock and I’m sweating in a heat wave in some winter pants that I found on clearance.

And now for the conversation:

Mom: Kate has one more public appearance next week then she’s off the hook for a while. She was probably running out of cute preggo coats. I was wondering if you had given this any thought.
Me: I can really relate, because it’s getting a little warm for my $6 maternity corduroys, so I’m thinking of calling it early too.
Heather: Kate might consider converting them to corduroy cut offs.

Heather always knows what to say to make me feel better.

Item #2: this chocolate mousse

Looks great, right? Well what if I told you that the main ingredient is…THIS:

Yup, that’s right. This delicious chocolate mousse is made from avocados!

I know that I just lost most of you, but for the brave ones who are still with me, you should make this immediately. I was inspired by this recipe here but was missing a few of the ingredients, so I just messed around with what I had. Justin gave it the good ol’ Seal of Approval…

…and said that he never would have guessed that it was made from avocado – it tastes just like real, rich, delicious chocolate mousse.

The recipe below is what worked for me, but add more or less of the ingredients depending on your taste (don’t have a huge sweet tooth? Add less brown sugar. Like it super chocolatey? Toss in a little extra cocoa powder.) and enjoy!

Chocolate Avocado Mousse
makes: 1 serving / prep time: 5 minutes
inspired by Giada De Laurentiis

  • 1 large ripe avocado, skin and pit removed
  • 2 1/2 tablespoons cocoa powder
  • 3 tablespoons honey
  • 1/4 teaspoon salt
  • 3/4 teaspoon vanilla extract
  • 1 tablespoon brown sugar

Add all ingredients to a food processor and blend until smooth, 1-2 minutes, scraping the sides if needed. Refrigerate for a few hours before serving.
